Banana Bread. You just can’t go wrong there. It smells soooo good baking and tastes sooo good when it’s done. But some recipes call for a LOT of sugar and oil which takes away a LOT of the health benefits of banana bread.
Or, you can use this recipe!
I found the base for this recipe in Laurels Kitchen; a fantastic vegetarian cookbook. Then a friend of mine shared her variations with me, and that’s been our family’s go to banana bread recipe ever since.
And now, here it is for you to enjoy too!
Ingredients
3 very ripe bananas mashed
juice of 1 lemon
1/3 cup olive oil (or 1/6 C applesauce and 1/6 C oil)
1/2 C maple syrup
1 1/2 C spelt flour
1/2 t salt
1/2 baking powder
1/2 t baking soda
1/2 C wheat germ
Optional – 1 C chopped Dates (makes it extra sweet, really yummy, but just fine without) and/or 1 C nuts
Directions
Preheat oven to 375 degrees
Mash the bananas, then add lemon juice, oil, applesauce, and maple syrup.
Then add all of the dry ingredients and mix well.
If you’re going to add dates and or nuts, add them now.
Grease your bread pan, muffin tins or 8×8 pan and then add the batter.
Bake for about 45 min, about 30 for muffins – the knife should come out clean.
