Super Duper Tastilicious Peanut Butter Fudge Cake!

Looking for a yummy twist on chocolate cake? This is it!
It’s called Peanut Butter Fudge Cake and I found it on, yep, all recipes.
The boys and I baked it for the first time today…even though I printed the recipe quite awhile ago. The hold up, buttermilk. But then I found out you can substitute milk with a bit of white vinegar in it, cup for cup when recipes call for buttermilk. So, I had been planning to make it but hadn’t gotten around to it. Then today we were looking for something sweet to bake. We had all the ingredients for this, so, we whipped it up.
It’s really easy to make, and, it’s super tasty! If you are a chocolate and peanut butter lover, this is a cake you’ve gotta try. Even if you just like chocolate cake. Heck, even if you just like cake, this is a yummy recipe. Serve it with some vanilla ice cream or whipped cream if you’d like to take the taste experience even further!
Ingredients
- 2 cups all-purpose flour
- 2 cups white sugar
- 1 teaspoon baking soda
- 1 cup butter
- 1/2 cup unsweetened cocoa powder
- 1 cup buttermilk
- 2 eggs, beaten
- 1 teaspoon vanilla extract
- 1 1/2 cups creamy peanut butter
- 1/2 cup butter
- 1/4 cup unsweetened cocoa powder
- 1/3 cup buttermilk
- 4 cups sifted confectioners’ sugar
- 1 teaspoon vanilla extract
Directions
- Combine flour, white sugar, and baking soda in a large mixing bowl; set aside.
- Melt 1 cup butter or margarine in a heavy saucepan; stir in 1/2 cup cocoa. Stir in buttermilk, and eggs until well blended. Cook over medium heat, stirring constantly, until mixture boils. Remove from heat. Mix into flour mixture, stirring until smooth. Stir in 1 teaspoon vanilla. Pour batter into a greased and floured 13 x 9 inch baking pan.
- Bake at 350 degrees F (175 degrees C) for 20 to 25 minutes, or until an inserted wooden pick comes out clean. Cool 10 minutes on a wire rack. Carefully spread peanut butter over warm cake. Cool completely.
- To Make Frosting: Combine 1/2 cup butter or margarine, 1/4 cup cocoa, and buttermilk in a small sauce pan. Bring to a boil over medium heat, stirring constantly. Pour over confectioners’ sugar, stirring until smooth. Stir in 1 teaspoon vanilla. Spread chocolate frosting over peanut butter on cake. Cut into squares.
